Domaine Maxime Toubart
It is in 2001 that Maxime comes back on the family exploitation in Le Breuil, where he will work for several years together with his parents, in order to learn the family know-how and to slowly be able to take over the domaine. In 2010, it is time for him to create his own brand, and to revisit the family's traditional method to reach a higher sustainability standard. He even makes changes to the selection of champagnes initially made by his parents, adding 2 “mono-cépages”: Blanc de Blanc et Pur Meunier. Today, Toubart's domaine is around 5 hectares, divided over more than 30 parcels, mostly located in Le Breuil. The main cépage is Meunier, representing around 60% of the parcels' area, then comes Pinot noir with around 25% and Chardonnay with 15%. Maxime is commited to work in respect to the environmental challenges of our time. In 2019, he decides to start the process for a double certification ‘Viticulture Durable’ et ‘Haute Valeur Environnementale – HVE’. The domaine is certified since 2020. Maxime Toubart has always been active in the local winemakers' organisations of Champagne. Between 2007 and 2009, he presided the group of young winemakers of Champagne, and in 2016 he became president of the General Union of Winemakers of Champagne.
